
COMPETITION RULES
NOT YOUR STANDARD BARISTA COMPETITION
La Rumba is a barista competition based on The Barista League format with a fun Colombian Twist. We want to find who can make the best tasting coffee using the equipment, coffee, and knowledge at their disposal.
Each local team will be paired up with one of our winning teams from The Mystery Coffee Vacation. The four baristas will compete together over the course of the night in three fun rounds of coffee competition.

Team applications open at the beginning of each season and close 40-60 days before each event. Click here to apply to compete in La Rumba.
Once the application period is over, we will randomly select 12 teams to compete. We will upload the selection videos on our Youtube channel and notify all applicants.

Each team is comprised of two baristas. You must have a team mate to compete with you. Come up with a fun team name! We love a good coffee pun.
You may apply for more than one event, but you may only compete once per season.
If any member of a team self-identifies as part of a systematically-marginalized community, that team will receive an extra entry into the random draw. We believe this is a more equitable way to select competitors in a traditionally cis-white-male dominated competition world. And we hope that this practice will result in more baristas belonging to systemically marginalized communities having the opportunity to participate, and the events reflecting the local demographics of working baristas.

Local baristas will apply to compete as per the application process for The Barista League, as per outlined above.
Each selected local team will then be paired up with two of our champion baristas to compete together as a team of four. There are some rules though:Round 1 - This round will be completed by the two local baristas.
Round 2- This round will be completed by 1 local barista and 1 visiting champion.
Round 3 - This round will be completed by 1 local barista and 1 visiting champion.
The teams will be allowed to select together which baristas will compete in rounds 2 and 3.

We will provide everything teams need to play, teams should NOT bring their own equipment. This rule is to make the competition accessible, fair for all teams and insures against any breakages after a few bubbly drinks.
We recommend you bring a water bottle and maybe a pen and paper if you want to take any notes.

On event day, selected teams will be required to attend mandatory briefing and training through to the end of the event, usually from around 1:30PM until 10:30PM.
During the briefing, we’ll explain everything teams need to know to participate in the event, answer any questions and explain how to get the most out of the experience. Each team will then have one and a half hours to get familiar with the equipment and dial their drinks for Rounds 1 + 3.
During this time, all of the teams will also have access to the expertise and experience of our event partners, who are there to help the competitors learn about the products and equipment and help them make the most out of the competition.
It can be a long day and we would like you to enjoy the event, thus we recommend teams to not work open shift on that day. There will be breaks for teams to rest, grab some food, mingle, and, of course, have a great time!

We will be monitoring all of our impacts on the environment during the event. To help us out, we ask that teams and everyone are conscious of how they’re using the resources around them.
We work hard to reduce the need for any single-use items and ask that all participants in the event be conscious of waste and ensure they are recycling at every opportunity.

Points will be awarded after the end of each round with the winning team being the team with the most points at the end of the night.
In case of a tie, the team with the higher score from Round 1 will be ranked higher.
ROUND 1
Teams have 10 minutes to make a drink order for four judges. At the end of the ten minutes, teams will present the drinks to the judges in a casual drinks service.

Teams will serve 2x Espressosto the judges.
The Espresso can be of any ratio and size but must contain AT LEAST one (1) single espresso shot. Espressos can be served in any cup size.
During service, teams will have to deliver 1x Flavour Descriptor and 1x texture Descriptor. If teams deliver more than one descriptor, the judges will only record the first descriptor.

Teams will serve 2 drinks made with Plant Based Beverage to the judges.
The Plant-Based Beverages must contain AT LEAST one (1) single espresso shot. This can be served in any available cup size with any quantity of Plant-Based Beverage.

The teams will have 2 minutes to serve the drink order to the judges. The idea here is a coffee service, NOT a structured presentation. We are looking for baristas who can create a nice service experience for the judges.
During the service, teams should give the judges ONE flavor descriptor and ONE texture descriptor for the espressos. This is the descriptor that teams determine is the most present/best encapsulates the espresso. The descriptor can be as vague or specific, but only ONE of each descriptor will be judged. If teams give more than one, the judges will only listen to the first one and ignore the rest.
For the plant-based beverage and ‘hot chocolate’, teams are not required to provide specific descriptors.

Teams can be penalized up to a total of 5 points for leaving their station in a mess. This will be judged by the stage manager at the end of the ten-minute working time.
Once teams leave their station to serve the judges, they MAY NOT return to the espresso machine, so all cleaning should be completed before leaving the station.
ROUND 2
Teams will be blindfolded and placed behind a table. There will be 5 solutions (a natural flavour that has been diluted with water) and 7 items on the table. The team has 5 minutes to match each infusion with the item used to create the infusion. For example, matching a solution of orange juice and water with an orange.
The two team members competing in this round may talk to each other to help decide on the right combinations. The other two team members may not help.
ROUND 3
The Mystery Round is a fun challenge designed to test the adaptability of the barista. Something a little different to anything you might find in your standard coffee competition.
• The Mystery Espresso Cocktail Challenge
In The Mystery Round, teams will receive a set of mystery ingredients and cocktail-making equipment. The challenge is to make a delicious coffee drink that can be on a coffee shop menu. The drink must highlight coffee as the main component and must include a type of alcohol.
The teams will have 5 minutes to prepare the drink in two mini glasses, one for each of the two judges.
Once the team has finished preparing their drinks, they will have a maximum of 30 seconds to present them to the judges. Think of this like a bartender would, presenting you with his delicious cocktail on the bar.

Up to 5 points are awarded for how accurately teams can describe the texture (or mouthfeel) of the espresso. Teams are only allowed to say one descriptor, and if they said multiple, judges would only evaluate the first one.
QUALITY - 5 POINTS
Up to 5 points are awarded for a smooth and creamy drink.

Up to 5 points are awarded for how accurately teams can describe the flavour of the espresso. Teams are only allowed to say one descriptor, and if they said multiple, judges would only evaluate the first one.
QUALITY - 5 POINTS
Up to 5 points are awarded for the quality of the flavour of the espresso.
Reduced points for negative tastes such as metal etc.

Therefore, each judge will score on this criteria based upon their experience of the overall delivery of the drinks. Teams do not need to do a flashy presentation to get high scores, just deliver their version of good service to the judges.

This is the overall flavor and drinkability of the drink. Up to 10 points are awarded for a delicious drink that the judges want to keep drinking!

Up to 5 points are awarded for the creative use of cold-brew coffee and ingredients. Judges can factor in the context and explanation that teams give when they present their drinks.

Being a great barista is about being well-rounded in coffee skills, and this is reflected in our scoring system. You can do well by winning one round, but to win The Barista League you need to do well across all three rounds!
